Blueberry Banana Buckwheat Pancakes

You can find Arrowhead Mills Buckwheat Pancake mix at most grocery stores and definitely all Whole Foods.  The instructions on the back include a vegan rendition using an egg replacer.  The only hack you need to make to make them healthy is substituting the OIL for APPLESAUCE (unsweetened).  Additionally, I put in a little vanilla and cinnamon.  


My personal trick for getting the blueberries and bananas perfect is to put them in after you've poured the batter into the nonstick skillet.  Cut the bananas extra thin and just evenly distribute them with the blueberries and push them down into the cooking batter and spoon a little batter over them.  I recommend doing this on the lowest heat setting.


Topped off with a little organic maple syrup and I'm in heaven.  We use WestSoy's light soymilk, too.

when you put applesauce in instead of oil, do you use the same measurements as you would if it was actual oil?

Yep! All it does is keep the pancakes moist (same function of oil) prune juice, pumpkin puree, soy yogurt, banana all do the same and some add a little bit of binding action, as well, but that's what the egg replacer is for, too.
