Memorial Day Red Potato Salad

Red Potato Salad
Lex and I just got invited to a Memorial Day neighborhood Block Party .....  Since I won't have much time that day to prepare I needed to come up with somthing super quick and easy.  Then I remebered my 20min or less Red Potato Salad.
 Ingredients: 
     ~ 8-10 Red Potatoes, Cubed
~ 2 tbsp. Dijon mustard
~ 2 tbsp. Malt vinegar
~ 3 tbsp. FRESH dill weed, Chopped
~ 1c. Frozen green peas
~ Paprika, salt, & pepper to taste

Cooking Instructions:
  • Cook chopped potatoes in boiling water for 5-10 minutes until just done, drain and set aside. 
  • Heat green peas in stove/microwave, put aside. 
  • In a separate bowl mix mustard, vinegar, dill and Nasoya, add potatoes and peas.  Mix well.
  • Add Salt/Pepper to taste, sprinkle Paprika on top.
  • Refrigerate until ready to serve.

I think Nasoya might be mislabeled because there first ingredent is soymilk which I found can contain 20-50% fat.

They probably use fat free soymilk. You can get it at Trader Joes or most large natural food stores. They just press the fat out of the bean to make it fat free. Its worth it to email the company and find out. From tasting the stuff and my adverse reaction (fatty food zits) to fatty foods I'm willing to bet its legit.
