Ingredients
-Frozen Butternut Squash Cubes (there are at least two organic kids at most natural supermarkets.)
-Fat free tortillas
-cherry or grape tomatos (four)
-ground cumin 1tsp
-paprika 1tsp
-crushed red pepper 1tsp
-liquid smoke (half a cap full)
As they heat up karate chop them with a nylon spatula until they are mush.
Fold in the spices (play with the amounts) and liquid smoke. Use about half a cap of the liquid smoke, but no more than a capful.
Once the spices are well mixed set aside and heat up both sides of a tortilla and spoon in enough to cover half and toss a few tomatoes on top.
Fold over and crisp on each side.
Cut them up and serve with salsa and have a party!

@Nancy, those are Whole Foods 365 Fat Free Tortillas. If you don't have a Whole Foods you could use http://www.foodforlife.com/ sprouted tortillas. They are available at most natural grocery stores and co-ops.
Image's butternut squash soup is a great replacer for butter on potatoes and other veggies as well =)

I have some sweet potatoes that were asking to be eaten, so I used them in place of the squash and little corn tortillas from trader joes instead of flour tortillas. Anyway, the flavor and texture is amazing. Love the spices you chose. Thank you for sharing this recipe!
