I don't know how to properly explain the amazing experience I had at Sage Vegan Bistro. I liken it to the scene in Ratatouille where the crotchety old food critic takes a bite of the ratatouille and tears come to his eyes and he is transported back in time to his mother's cooking. My mom can't cook, but it did take me back in time and space to a little restaurant in France where I thought I tasted food for the first time.
I had spotted this French Grain Bowl on the menu before deciding to see if I could eat at the newest vegan restaurant in town. I explained to the owner and chef (both wonderfully helpful) that I didn't eat oil or anything fatty. Chef Greg said he could saute the veggies in lemon juice and sub some things around. My first bite happened, I really paused in disbelief that anything could be so amazing. My rate of chewing slowed to a crawl, savoring every morsel. Kristin and I both chewed in slow motion like I'd suspect a death row inmate savors their last meal. We did not want the meal to end, cranberries, tiny slivers of almonds, cherry tomatoes and other surprises exploded with each bite. The flavors hit our tongues like paint to Jackson Pollok's canvas... Not a morsel was left behind.
Top Notch Heathly Vegan Eating... The bar has been raised.

I am writing up my Sage post right now--I had the french grain bowl too. I will have to ask without oil next time. Soo good!
Could the fact that the veggies were sauted in lemon juice attribute to some of the flavour? It's worth trying.
