Fat Free & Gluten Free Vegan Carrot Cake ...yum a lum lum!!!

Simply Organic Carrot Cake is SIMPLY DIVINE!!!  I ran across Simply Organic's cake mixes in whole food yesterday and noticed almost each mix comes with a "Alternate Vegan Recipe" on the box that just happens to be Oil Free!!  Therefore, last night Lex and I couldn't help but guiltlessly indulge in a couple slices while trimming our xmas tree.  

You Will Need:






















Directions:
Preheat Oven to 350 F.  Use a non stick or parchment paper  (NO GREASE ewww) in a round cake pan.  Empty Carrot Cake Mix into mixing bowl.  Add apple sauce, water, and carrots.  Stir just until mixture is evenly moist.
Pour into cake pan.  Bake for 45 to 50 minutes, or until center tests done with a toothpic.  Let cool on rack for 10 minutes.
Place on a severing plate.  Spread Maple Butter and shredded carrots for decoration.
