Vegan Pumpkin Muffins

*PLEASE NOTE: This is NOT a Healthy Vegan Approved RECIPE, it has OIL!!  My sister wrote it this blog post.  She is enthusiastically attempting to become a Healthier Vegan and I don't want to derail her in progress by not condoning her attempt.  Everything in life is about recognizing your mistakes and correcting them next time.

A few weeks ago I saw some delicious pumpkin muffins pop up on my Instagram feed. They looked delectable  but were they healthy vegan style? I messaged my friend Heather to find out.























She took the Trader Joe's Pumpkin Bread & Muffin mix and veganized it. It might not be completely up to snuff with Lex's healthiest vegan mantra, but this shit is good! Like, totally nom-alicious. It's like taking a Starbuck's pumpkin spice latte and baking it in the oven. The muffins are so sweet, you could actually whip up some tofutti icing to top them off. YUM.


Ingredients:
She baked her bread at 350 degrees for 45 minutes. However, when I made the muffins, I only baked them at 350 for 26-27 minutes, and they were perfect. Just keep an eye on them, and check it with a toothpick. If nothing sticks to the toothpick, then you are ready to rock and roll!

I was looking at the pumpkin mix at TJs yesterday and the mix itself was not vegan--it contains dairy. Just an fyi :)

Unbleached Enriched Flour (wheat flour, niacin, reduced iron, thiamin momonitrate, riboflavin, folic acid) Sugar, Dried Pumpkin Flakes, Spieces, Salt, Arabic Gum, Soybean Oil (DON'T APPROVE!!), Leavening (sodium bicarbonate, sodium acid pyrophosphate)

First off these are not what "the healthy vegans" consider a Healthy product! But they seem to be vegan. Am I missing something you know and I don't?
