Skinny Vegan Trail Mix Granola Bars

The energy bar selection anywhere on the plant is diseased with fat, supplements & copious amounts of isolated proteins.  Its so bizarre when the only foods that ACTUALLY fuel muscle for an endurance event are starches, which break down into glycogen.  These Trail Mix Granola Oat Bars work wonderful for long bike rides & hikes and can be made into cookie shapes, too!  

Ingredients

  • ½ cup unsweetened applesauce
  • 1 tablespoon vanilla
  • 2 tablespoons PB2
  • 3 tablespoons maple syrup
  • 2 cups old fashioned oats
  • ½ cup oat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt (optional)
  • 2 tablespoons chopped dried cranberries
  • 1 tablespoon chopped dairy free chocolate chips
  • 1 tablespoon chopped pecans
  • 2 tablespoons almond milk

Directions

  • Preheat oven to 350ºF.
  • Prepare a cookie sheet with parchment paper.
  • Mix applesauce, vanilla, almond milk, maple syrup into a creamy consistency in a large bowl.
  • In another bowl, combine oats, flour, baking powder and salt.
  • Add the dry ingredients to the wet ingredients and stir until they are well combined; the batter should be slightly sticky.
  • Fold in the chocolate chips, nuts & cranberries.
  • Place bar-sized servings of the batter onto a parchment paper baking sheet.
  • Bake for 15-18 minutes.
  • Cool & store in airtight container.
