Despite the lack of nutritional information on their website or in the store and misleading health info they at least have a list of ingredients and have always been positive about attempting to feed me.
I took my carnivore MMA fighting contractor buddy to the El Segundo location on a small detour from Home Depot. I figured I'd show off the prime vegan transition food and drink some lemonade, it turns out I had a great meal and he hated the fakeness. His favorite place is Stuff I Eat.
Here's my delightful hack made possible by the wonderful staff at Veggie Grill;
Baja Fiesta $8.95 minus the Avocado, minus tortilla strips, minus dressing add lemon juice and/or hot sauce from the condiment bar. Update: They now have balsamic vinegar.
It was super good!

they have a soup/salad combo that you can get with steamed kale (no dressing) and bean chili. i don't know if the chili is oil-free, but if it is, that would meet HV standards i think.

I always order the baja fiesta--in a similar fashion to yours: I say no avocado, no tortilla strips, but I add blackened tempeh (which surely is made with oil) and ask them to toss it with half the dressing. I love it.
why would you have no avocado? that's good fat from vegetable.
El Tigre, Avocados are 75% fat with about 16% coming from saturated fat. Unless someone is trying to gain rapid weight its not a suggested source of calories. Our bodies need only a small % of fat as fuel, fat & protein shouldn't be primary sources of fuel, those are for famines.
