Biscuits and Gravy, healthy styles!!! =)

We get a lot of our healthy food ideas from the McDougall Forum.  This particular one came in with a pinto bean gravy post to start and a nice comment with the biscuits popped up soon after, showing its always important to read what everyone has to say! 
 Kristin's Chunky Style Gravy 

Pinto Bean Gravy (reposted from the Food Forum on drmcdougall.com)
In a small pot, mash a cup of pinto beans very well. 
Add 1 generous teaspoon tomato paste.
1/2 teaspoon onion powder and garlic powder
A pinch of salt
A grinding of pepper
Start with about 1/2 cup water/veggie broth and just keep adding as it heats up to your desired consistency. 
Stir well over medium heat.  Taste for seasoning. 

(If you're in Maximum Weight Loss you can do this over a baked potato instead of the biscuits.  Makes enough to cover about four.  Remember flour fills the carb tank fast preventing your body from dipping into the fat fuel tank, but carbs don't turn to fat, not even white flour or sugar.)









Drop Biscuits  (The (Almost) No Fat Cookbook: Everyday Vegetarian Recipes by Bryanna Clark Grogan)
Preheat oven to 400F/200C.
Mix together in a medium bowl:
2 cups flour [I usually use half WW and half Unbleached White]
1 teaspoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt


Stir in with a fork:
1 1/4 cups reduced-fat soymilk [or other low-fat, non-dairy milk] mixed with 1 tablespoon lemon juice (mix these together first and let sit for a minute)

Stir quickly to moisten the dry ingredients. Drop the mixture by large spoonfuls onto a parchment-lined baking sheet. Bake for about 10 minutes. Serve immediately. Makes about 9 biscuits.

MUST DO variation: For Herb Biscuits, add 1/2 teaspoon garlic powder, 1 tablespoon minced fresh basil, 2 tablespoons minced fresh chives, and 1 tablespoon minced fresh oregano, thyme or marjoram.

Lex's Creamy Gravy with Hot Sauce (taste more like GRAVY than Chunky Style)

Pour the Gravy on the biscuits, garnish with a little hot sauce and chives and you're in heaven.  It takes me back to the mornings at McDonalds when I'd rarely wake up out of my lethargic Standard Diet Stupor to make it down before they stopped serving breakfast except these don't super size you!

Hello

I am a long time vegan (who has been addicted to white sugar for even longer) and I just ordered the McDougall book so that I can (hopefully) stop being addicted to evil things!

I came across your site via quarrygirl and I just wanted to say I am super excited to try the recipes posted and am really grateful that your blog will be here so that I feel less lonely when I'm eating plain potatoes for dinner :).

I know you can do better than plain potatoes for dinner! Get creative! Pour soup, gravy, red sauce, chili, etc over them! You can pick up the McDougall Quick and Easy Cookbook at Whole Foods, but really all the recipes are on his website, searchable news letters and food forum for free! Help us knock the plain out of potatoes ok?!

These look really great! I've had biscuits and gravy on my mind all week. I was going to do a smoked almond gravy, but nuts=fat.
