Healthy Vegan Tartine

A Tartine is a French open faced sandwich with a rich or fancy spread.  We had been getting our Tartine fix on at Le Pain Quotidien, but their hummus seemed a little oily so while we were eating breakfast there today we grabbed a half loaf of their sourdough and set out for a healthy vegan tartine dinner.


Its pretty simple to create a black bean  hummus.  1 can of eden blackbeans, 1/2 tsp of ground cumin, 2 tbl of water, 2 tsp of reduced sodium tamari, 1 tsp of lemon juice and a half a cup of fresh cilantro and a food processor.
Top your tartine with cherry tomatoes, cucumber, shredded carrot and squeeze a little lime on it and you're set!  Make sure to toast your bread!

that looks awesome! i miss hummus a lot since i've gone trying to be all oil-free :(

we live on oil free hummus! Get one of those tiny (mini) food processors like $30 at BB&B and you can toss anything in with a can of chickpeas to make asian hummus, mexican, etc what ever spices you have on hand (or just lemon juice garlic and onion for a regular flavor, you won't miss the oil or tahini)
